Honey Chipolte Chicken Tacos
Ingredients you will need to make honey-chipotle chicken tacos:
1 pound (450g) boneless, skinless chicken breasts
2 chipotle peppers in adobo sauce, minced
2 tablespoons (30 ml) honey 1 tablespoon (15 ml) olive oil
1 tablespoon (15 ml) fresh lime juice
1 teaspoon ground cumin
1/2 teaspoon garlic powder
Salt and black pepper, to taste
8-10 small tortillas Your favorite taco toppings, such as diced tomatoes, chopped cilantro, sliced avocado, crumbled queso fresco, and sour cream
Instructions:
In a large bowl, whisk together the minced chipotle peppers, honey, olive oil, lime juice, cumin, garlic powder, salt, and black pepper.
Add the chicken breasts to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 30 minutes or up to 4 hours.
Preheat your grill or oven to 400°F (200°C).
Remove the chicken breasts from the marinade and discard any remaining marinade.
Grill or bake the chicken breasts for 20-25 minutes, or until they are cooked through and no longer pink in the center. If grilling, turn the chicken occasionally to ensure even cooking.
Let the chicken rest for 5 minutes, then slice it into thin strips.
Warm the tortillas in a skillet or in the oven.
Assemble the tacos by placing a few strips of chicken on each tortilla, then adding your favorite toppings.
