Honey Balsamic Roasted Vegetables

Roast vegetables like Brussels sprouts, sweet potatoes, and cauliflower with a drizzle of honey and balsamic vinegar until tender and caramelized.

Ingredients you will need to make honey-balsamic roasted vegetables:

1 pound (450g) Brussels sprouts, trimmed and halved

2 sweet potatoes, peeled and cut into 1-inch (2.5cm) cubes

1 head of cauliflower, cut into florets

2 tablespoons (30 ml) olive oil

2 tablespoons (30 ml) balsamic vinegar

2 tablespoons (30 ml) honey

Salt and black pepper, to taste

Instructions:

Preheat the oven to 425°F (220°C).

In a large bowl, toss the Brussels sprouts, sweet potatoes, and cauliflower florets with olive oil until evenly coated.

Season the vegetables with salt and black pepper to taste.

Spread the vegetables out in a single layer on a baking sheet.

In a small bowl, whisk together the balsamic vinegar and honey until well combined.

Drizzle the honey-balsamic glaze over the vegetables, making sure they are evenly coated.

Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and caramelized around the edges.
