Honey-glazed carrots

Roast carrots with a drizzle of honey and a sprinkle of thyme or rosemary for a sweet and savory side dish.

Ingredients you will need to make honey-glazed carrots:

1 pound (450g) carrots, peeled and sliced into 1/2-inch (1.25cm) thick rounds

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon fresh thyme or rosemary leaves, chopped

Salt and black pepper, to taste

Instructions:

Preheat the oven to 400°F (200°C).

In a large bowl, toss the sliced carrots with olive oil, honey, and fresh herbs until they are evenly coated.

Season the carrots with salt and black pepper to taste.

Spread the carrots out in a single layer on a baking sheet or in a baking dish.

Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized around the edges.

Serve the honey-glazed carrots hot as a delicious side dish for your favorite meal.

Note: You can also add other vegetables, such as parsnips, sweet potatoes or turnips to the mix to add variety and color.
